CHRISTMAS OYSTERS

On Christmas morn 2004 I cooked a special breakfast. The menu was:

Fried Oysters, Scrambled Eggs, Homemade Biscuits, and Russian Tea.

The oyster dip was made from crushed saltine crackers and yellow corn meal, equal parts. It was seasoned with salt, pepper, and lots of paprika. Coat the oysters in the cracker mix and pan fry in hot canola oil, hot enough to make a water drop spatter. Turn the oysters over after a couple of minutes so that the coating browns on both sides.

The scrambled eggs are sautéed in margarine with shredded cheese for flavor. I use diet eggs, diet margarine and low fat cheese.

Russian tea is ordinary sweet hot tea with a little orange juice and powdered cinnamon added.

Homemade biscuits came with yesterday's Christmas Eve lunch from Meals on Wheels. Butter them and warm them in the microwave. Then spread on whole cherry jam.
